A slow cooked pork sandwich with BBQ sauce is a great meal to cook and have leftovers for sandwiches later or feed a large group of friends a great slow cooked pork sandwich. All you need is a piece of pork, a pork butt or large chunk of pork shoulder also does the trick, a crockpot, some salt, liquid smoke, and at least 6 - 9 hours depending on the size of the piece of pork. The Liquid Smoke is key for making tasty flavored pulled pork when its all done cooking in the crockpot.

This recipe is a simple kind of set and forget for 6 - 8 hours on average kind of recipe that results in really soft tender pork that goes great in a variety of ways but my preference is just with BBQ sauce and pickles on a nice thick bun.
A large piece of pork, a prok butt or a shoulder can work as well. Depending on how fatty the meat is you may choose to want to trim back some of the fat which is more than acceptable to do to your preference, but the crockpot will cook things down very well at the end the fat will remain in the crockpot and you will be left with just great tender pork.
I like to use a hawaiian sea salt for the salt that I use to coat the outside of the meat with, however regular salt will do just fine. Same with pepper, I prefer to grind it kind of rough and then cover the meat, but it doesnt really matter as long as you use pepper to add some seasoning.
The real key is to use liquid smoke there is both a hickory and mesquite flavors. This provides that hint of BBQ smoky flavor into the meat even though its cooking in a crockpot not a slow fire. Use a couple teaspoon or two, you don't need to overdo it as the liquid smoke can go a long way, so a few caps full usually does the trick.

After the pork has been seasoned and is in the crockpot, and you have put in the Liquid Smoke, then you can place the lid on top click the crockpot on low, unless you were late to getting things set up then, it still works out if you need to set it on high for the first little bit to get it going quicker.
But set the timer on your iPhone or whatever device you use for 6 hours if you are going on low and you can walk away.
The slow cooked pork will be in crockpot and it will be all steamed up on the top glass and the meat will be sweating the fat out. One of the keys to cooking with the crockpot is to keep the lid on and just let it do its thing all nice and contained with the heat and juices from the meat. After you have done a few you will get to the point where you can look and see that the meat is tender enough to where it will just fall apart in chunks and shred up with the lightest touch with a fork. But in the mean time if you have to you can pop the lid off and test it to see how things are going, if it seems too stiff and not cooked to the point of falling apart put the lid back on immediately and revisit in 2 hours.
For most average size crockpots the a piece of pork that fits nicely will usually cook within 8 hours sometimes a little longer but not much usually. But each crockpot is a little different so you can play around with the settings to determine the best length of time for your equipment.

This is a pretty basic sandwich. A nice thick bun or sandwich roll cause the pork can be nice and juicy and regular sliced bread tends to get mushy too quickly. I like pickles so i put some pickles on the sandwich as well as some BBQ sauce. I generally do not put much else on the sandwich, but I imagine it could be good with a whole lot of other condiments and ingredients.
